Sweet Potato & Coconut Milk Puree (6+ months)

Sweet potatoes are widely accepted by most babies. They’re sweet and their texture when pureed is amazing. They’re also so versatile. I’ve tried sweet potatoes with thyme, cinnamon, and rosemary. They’re also nice mixed with other not-so-appealing flavors—chicken, beets, beans. But this sweet potato and coconut milk is my favorite way to serve sweet potatoes to my little foodies. Sweet potatoes, already super creamy, are made even more luxurious when you add the silky coconut milk. It’s a match made in foodie heaven. And just think…they start with this puree and before you know it you’re serving them chunked sweet potatoes curry with coconut milk and curry paste. Baby steps and flavor exposure…that’s how you create a little foodie.

SWEET POTATO + COCONUT MILK PUREE

  • 4 sweet potatoes, peeled and cubed
  • 1 can organic coconut milk

Bring a large pot of water to boil over med-high heat. Once boiling, add the cubed sweet potatoes and cook until very soft. Place cooked sweet potatoes in the food processor (do not discard the cooking liquid) along with the can of coconut milk and blend until smooth.

If needed, add the cooking liquid ¼ cup at a time until desired consistency is reached.
