Pea + Mint Puree (4+ Months)

I recently bought Ina Garten’s latest cookbook, Modern Comfort Foods, and she has managed to outdo herself again. I’ll never understand how that woman can crank out cookbook after cookbook and each one be better than the last…she’s amazing! So far, I’ve tried the cacio e pepe cheese puffs, the chicken enchiladas, the lamb ragu, and the crispy chicken with lemon orzo—all amazing! But my very favorite recipe, so far, is the fresh pea salad with mint and manchego. Yummy peas and fresh mint tossed in a refreshing lemon vinaigrette…and then topped with salty delicious cheese. It was pure heaven and absolutely perfect for welcoming spring—you better believe that deliciousness will be on our Easter lunch table.

Both Liev and Silas gobbled it up—amazing since they don’t like “green” food (*rolling eyes*). I wanted to get Quinn in on the action, but he’s too little for Ina’s recipe, so I decided to mix a little mint in with his pea puree. It was a hit! He absolutely loved it. The mint coupled with the peas was a beautiful combination. The best part…I found organic frozen peas at Costco so it was easy to make this puree.

Added bonus: peas and mint are both excellent remedies for “tummy troubles” so mix this one up for your little foodie next time they get a bout of constipation.

PEAS + MINT

  • 1 cup peas, fresh or frozen
  • 2-3 mint leaves, roughly chopped

Bring a medium pot of water to boil and cook your peas until soft. Put the peas, mint and ¼ cup of cooking liquid into the food processor and pulse until smooth. Add more cooking liquid as needed to reach your desired consistency.

*This puree can also be made in a blender or food mill.
