St. Patrick’s Day is right around the corner, and I’ve got a puree that will ensure your little one gets to enjoy a taste of Ireland too.

My mom makes the BEST shepherd’s pie in all the land! And, while her minced meat mixture is delicious, it’s her colcannon that steals the show. Creamy potatoes, cabbage, and leeks…a heavenly mixture indeed.

I came up with this puree when Silas was little. At the time I was putting together our annual St. Patrick’s Day menu and realized that he was too little to enjoy any of it. And thus, colcannon puree was born.

NOTE: Cabbage is notorious for giving people gas. So, while you can add cabbage to this puree, I wouldn’t recommend it. I’m afraid it’ll give little ones the tummy troubles. 

LEEK PUREE (6+ MONTHS)

  • 2 cups leek, washed thoroughly and sliced into rings
  • 3-4 small white potatoes, peeled and diced

Place leek and potatoes in steamer basket with one inch water over medium heat. Cover and steam until potatoes are very soft. Do not discard water.

Place leeks and potatoes in food processor and pulse until smooth.

If needed, add steaming liquid 1 tablespoon at a time until desired consistency is reached.
