We like movie nights. We like to prepare snacks, snuggle up on the couch, and watch a good film all together at least twice a month—more once September rolls around and Adrian pulls out the Christmas movies. When Covid first hit, that “at least twice a month” turned into every week for a while, and I didn’t mind one bit. Life for the boys got real boring because of “the sickness” and we were looking to bring as much sunshine and joy into their quarantined world as possible. Movie night, family camping in the living room, online Animal Crossing with Auntie and cousins, tea parties, “at-home” restaurant dining…we got real creative, real quick! Our only complaint was that our movie night snacks got a bit repetitive. I needed a way to jazz things up with what I had in the pantry. I started with kettle corn.

There’s a kettle corn stand at our local farmer’s market that we like to hit up, but of course with Covid, there was no chance of picking up a bag. I decided to try to make my own…it’s salt and sugar, how hard can it be? Turns out…it’s pretty tricky! You have to find your sweet/salty “sweet spot” and I recipe-tested that one for a while. Eventually I figured out it was easier to make a “seasoning” that we could use to flavor our own individual servings—kettle corn “to taste” if you will. It was a huge success! I decided to jump down the rabbit hole and see which other family-favorite flavors I could turn into popcorn seasonings. There were quite a few failures—NO, coffee flavored popcorn is not a good idea. Here are the successful recipes.

Kettle Corn

  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 ½ Tbsp kosher salt

Mix ingredients all together and sprinkle desired amount over freshly popped popcorn. If you want it to stick a little better, drizzle your popcorn with a little melted butter before adding the kettle seasoning. Store unused kettle seasoning in an airtight container for future use.

*Note: I like to run my seasoning mixture through a fine sieve before use, to ensure there are no clumps. Nobody likes clumps.

Mexican Hot Chocolate

  • 1 bag (3.29oz) popcorn, freshly popped
  • 3 Tbsp butter, melted
  • 2 Tbsp unsweetened cocoa powder
  • 1 Tbsp granulated sugar
  • 1 tsp ground cinnamon

In a small bowl, whisk together melted butter, cocoa powder, sugar, and cinnamon. Pour over freshly popped popcorn and mix until well coated.

Cacio e Pepe

  • 1 bag (3.29oz) popcorn, freshly popped
  • 3 Tbsp butter, melted
  • 1 tsp black pepper, coarsely ground
  • ½ tsp garlic powder
  • ⅓ cup grated Parmesan

In a small bowl, whisk together melted butter, pepper, and garlic powder. Pour over freshly popped popcorn and mix until well coated. Sprinkle Parmesan over popcorn and give a quick stir.
