I’m always on the hunt for healthy snack ideas for the boys. They have one designated snack time between lunch and dinner–the largest block of time between meals–so I like to make it a healthy and substantial snack.

Adrian has been on an apple kick lately, so a lot of our snacks have revolved around apples–sliced apples with yogurt dip, apple chips, warm cinnamon apples, and apples with peanut butter dip. Our new favorite: Apple Rings.

Apple rings are awesome for a couple of reasons, but mainly because they’re delicious and super customizable.

You basically take sliced apples, spread peanut butter on them and top with whatever yummy things you have on hand. Our go-to combination is sliced almonds, shredded unsweetened coconut, and mini semi-sweet chocolate chips, but I’ve also done granola, dried fruit, white/dark chocolate, and a variety of nuts. You already have a winning combination with the apples and peanut butter, so whatever you put on top is basically just extra yumminess.

NOTE: The peanut butter is easier to spread and sticks better if you dry the apple slices a little first. I usually sandwich my apple slices between two pieces of paper towel and let them sit there for a few minutes…just until some of the moisture is drawn out.
